New Name, Concept for República

Bread & Butter Concepts announces a new restaurant is moving into the República space.

Less than a year after opening, República will close its doors Saturday, May 28th and reopen in mid-June as The Oliver. Both restaurants are operated by Bread & Butter Concepts (BBC).

“With the new ownership of the Country Club Plaza, we were given the opportunity to change the concept and feel that it’s best for the well-being of our employees and the strength of the Bread & Butter Concepts brand,” said BBC CEO and founder Alan Gaylin in a statement. “We are extremely excited about the new concept and feel that it will connect with the Kansas City community.”

The Oliver is described as a refined version of an American tavern and will serve familiar dishes with a twist—for instance, instead of a typical French Dip, guests can enjoy a Signature Smoked Pork Shoulder Dip.

The space will be transformed to offer an open layout featuring an industrial aesthetic balanced by elegant touches. Textured glass in the bay window will be removed and door will be added to bring in natural light and fresh air.

The restaurant, which is retaining República’s staff, will be open for lunch and dinner seven days a week and free valet parking will be available for the first month it’s open.
