Timothy Jones’ Sweet Chili Wings

Hollywood Casino Executive Chef Timothy Jones turns up the heat with this recipe for Sweet Chili Wings.

12 wings (6 drumettes, 6 wings)

1/2 cup rice flour

Hot Chili Sauce

Spring onions

Celery sticks

Peanut Sauce

Dredge wings in 1/2 cup rice flour and fry until done. Toss in hot chili sauce. Place on plate and sprinkle with spring onions. Serve with celery sticks.


For Hot Chili Sauce:

1 1/2 cups sweet chili sauce

3/4 cups maple syrup

3 tablespoons cilantro

3 limes

1 tablespoon chopped garlic

1 tablespoon chopped ginger

1 tablespoon Thai chili

Mix all ingredients. Toss with chicken wings. Serve with celery sticks and peanut dipping sauce.


For Peanut Sauce:

3 tablespoons peanut butter

1 can coconut milk

1 teaspoon red curry paste

1 tablespoon ginger, minced

1 tablespoon garlic, minced

1 tablespoon cilantro, chopped

1 tablespoon shallots, minced

Water to adjust

Add ingredients to a pot on low heat; using a wire whip, slowly blend until mixture is smooth.  Add water to adjust consistency.
