Robert Padilla’s Roasted Chicken with Sweet Potato and Brussels Sprouts

One 2 -3-pound whole chicken

Salt and pepper

2-3 sprigs fresh thyme

2-3 sprigs fresh tarragon

2-3 ounces butter (soft)

1 ounce cooking oil

1 pound Brussels sprouts, thinly sliced

2-3 sweet potatoes, peeled and cubed

Preheat oven to 450ºF degrees. Season the inside cavity of the chicken, placing the herbs and garlic inside. Rub the top of the chicken with the softened butter and season with salt and pepper. Place prepped Brussels sprouts and sweet potato in bottom of a roasting pan with oil, salt and pepper. Place the chicken in the roasting pan with the vegetables. Put chicken in the oven and roast at temperature for about 30 minutes. Pull chicken from oven and let rest for 15 minutes. Place on platter and serve with vegetables.
