2 ounces baby kale
2 ounces cooked quinoa
1 ounce dried cranberries
1 artichoke heart, split
2 cherry tomatoes
1/2 ounce roasted red pepper
2 ounces olive brine vinaigrette
*Tip: For an extra protein kick, add chicken, shrimp or salmon.
Cut up artichoke heart, cherry tomatoes, red pepper and lemon. Toss over bed of kale and cooked quinoa. Lightly drizzle olive brine vinaigrette. Serve and enjoy!
