Quick & Healthy Recipe: Lemon Herb Vinaigrette

Mix up your marinades with this vinaigrette by The Mixx’s Jo Marie.

When you think of eating healthy, salad is usually the first food that pops into your head. Next time you consider drowning your greens in a dressing that holds a ton of extra calories, try drizzling this low calorie vinaigrette on it instead. Not interested in salads? This vinaigrette also makes the perfect marinade for grilled chicken or fish!

Ingredients

1 cup olive oil

1/3 cup fresh lemon juice

1/4 cup white wine vinegar

20 mint leaves

20 basil leaves

2 tablespoons Dijon mustard

2 cloves garlic

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon pepper

Combine ingredients in blender. Yields 2 cups. Can be used as a vinaigrette or marinade for chicken, fish or salads.
