Q39 does more than just delicious barbecue, as our recipe of the week proves.
With gorgeous weather blowing in this weekend, we’re craving light and fresh foods. Q39 is helping us cook this week, so read on and have a nice dinner for two, or invite everyone over and be the hostess with the most-ess.
Q39’s Wood-Fired Grilled Salmon Salad
1 head bib lettuce
1 1/2 ounces balsamic vinaigrette dressing
2 ounces strawberries
1/2 ounce toasted almonds (season with butter, salt and pepper)
16 ounces grilled salmon cooked medium rare/medium
Wash and dry bib lettuce. Top with the rest of ingredients. Grill salmon over oak wood to medium rare/medium. Place salmon on top of the salad (warm). Drizzle with balsamic herb vinaigrette. Serves four.
1 1/2 tablespoons Dijon mustard
3 cloves of garlic
1/3 cup diced red onion
1 cup balsamic vinegar
1/4 cup sugar
1 1/2 cups olive oil
1 1/2 cups salad oil
1/4 cup chopped fresh herbs (basil, thyme and parsley)
2 teaspoons salt
Ground pepper to taste
Place first five ingredients in bowl. Puree with bermixer and add oil slowly until all is incorporated. Add herbs and blend for five seconds. Season with salt and fresh ground black pepper. Makes enough for four servings plus leftovers.
