Watermelon has long been one of the staples of the summer season for its refreshing taste. We put a twist on the classic heat-beating snack with this recipe for Watermelon Salad with Balsamic Reduction. With just four ingredients, this salad takes only a few minutes to put together and is good for any occasion whether it be a light lunch, summer picnic, or as a side dish for a family dinner.

Serves: 4

Ingredients:

  • 1/4 cup balsamic vinegar
  • 6 cups diced seedless watermelon
  • 4 ounces crumbled feta cheese
  • 1/4 cup chopped mint leaves

Instructions:
To make the balsamic reduction, add balsamic vinegar to a small saucepan over medium heat. Bring to a boil until thickened, about 4-5 minutes

In a large bowl, combine watermelon, goat cheese, and mint leaves. Drizzle with balsamic reduction and serve!
