Westport’s new southern-inspired whiskey bar, Julep, is the creation of husband and wife duo Keely Edgington and Beau Williams. Edgington worked in the art world for 10 years before getting burnt out and taking up bartending, which is how she met Williams, a bartender well known for his time at Manifesto.
The pair formed cocktail catering company Hawthorne and Julep, then set their sights on a bigger project: a whiskey bar designed for thirsty customers looking for everything from beer and a shot to a whiskey-based cocktail.
“When you look at the surrounding areas and what’s going on in Westport, beer is king, there’s no doubt about that,” says Williams. “There’s no shortage of opportunities to find everything from a $20 bottle of beer to a $2 can, but nobody’s doing cocktails in a classic way.”
Make that no one was. And while Rye chef de cuisine John Brogan consulted on a menu of southern snack items, the atmosphere is designed to feel more like a bar than a restaurant, somewhere you can “let your hair down and shake it out,” Edgington says.
