Healthy Minute Meal: Moroccan Carrot Salad

Life moves at a dizzying pace these days, which makes us wish for a few more hours to tack on the end of each evening. And let’s face it, after a long day in a business suit or shuttling kids to and fro, the last thing we have the energy for is preparing a gourmet feast. The drive-in windows beckon us with their convenience, but with these simple, quick and entirely nutritious recipes, you can end a long day on a deliciously wholesome note.

MOROCCAN CARROT SALAD {serves 6}

This colorful and satisfying salad makes use of seasonings to amplify the taste of raw vegetables.

Ingredients

6-8 medium carrots, thinly sliced (may use a mandoline or a food processor)

1 cucumber, thinly sliced

Toss gently together.

Vinaigrette ingredients

½ cup extra virgin olive oil

¼ cup lemon juice

½ tsp. cumin

¼ tsp. paprika

2 cloves garlic, minced

handful of parsley, chopped

salt and pepper to taste

dash of Tabasco

Mix all ingredients with immersion blender or whisk until well blended. Toss ¼ of the vinaigrette with carrots and cucumbers to lightly coat. Store the remaining vinaigrette for salads.

Extra step: Serve over a bed of arugula and top with some sautéed fennel.
