Healthy Minute Meals: Crimson Sweet Greens Salad

Good salad rarely comes out of a bag. It may seem easier, but we’re here to tell you, you can make an amazing meal in just a couple of minutes – and there’s a perfect dressing recipe inside as well!

Anyone can make a salad. That’s why we decided to ask someone who really knows what they’re doing when it comes to healthy eating from special ingredients.

Jo Marie Scaglia has been in the business of fast-casual healthy food since she founded The Mixx in 2005. Here’s her personal recipe for a quick and delicious fruit and cheese salad with mounds of moxie.

Crimson Sweet Greens Salad {serves 4-6}

Fresh fruits prepare the palate for summer’s bounty, and walnuts add a hint of crunch and protein.

  • 3 heads butter lettuce (also known as Boston/bibb lettuce)
  • 2 mangos, sliced
  • 2 cups strawberries, quartered
  • 2 blood oranges, peeled and segmented
  • 1 cup walnuts, toasted
  • 6 oz. Maytag blue cheese

Toast walnuts in 350-degree oven until golden brown. Set aside. Clean and separate lettuce leaves. Combine all ingredients and toss with Crimson Berry Vinaigrette. Top with blue cheese.

Crimson Berry Vinaigrette

  • 8 tbs. extra virgin olive oil
  • 3 blood oranges (juice and zest)
  • 3 strawberries
  • 2 tbs. local honey
  • Pinch sea salt and fresh cracked pepper

Combine strawberries, juice and zest of orange, honey, salt and pepper in food processor.

Add olive oil until well-mixed.
